What you will walk away with
After completing this workshop, you will:
- have a working system: an AI agent that processes your documents and delivers structured results
- understand the sovereignty landscape: know the real differences between US cloud, EU cloud, and local deployment, and what each means for compliance
- be able to evaluate platforms: confidently assess AI providers based on data retention, training policies, and jurisdiction
- know how to build workflows: create reusable document processing automations without writing complex code
- have a compliance playbook: understand what audit trails you need and how to implement them for EU AI Act readiness
- make informed architecture decisions: choose the right approach (EU cloud vs. local) based on your organization's risk profile and resources
Tools & Platforms
This workshop uses Clawdbot, an open-source agentic AI framework, combined with Langdock, a German AI platform with ISO 27001 and SOC2 Type II certifications.
- Clawdbot is an open-source tool that connects to any LLM provider (EU-hosted or local) using file-based configuration and giving you full transparency into what your AI does.
- Langdock is an EU-hosted (Germany) GDPR-compliant framework, with explicit no-training policy and enterprise-grade security certifications.
They can be used to demonstrate how to build a sovereign document processing assistant - one that could handle legal contracts, financial reports, or research data with appropriate compliance guarantees.
Participants can also follow along with fully local setups (Ollama + open models) for maximum control.
